Chicken soup is relatively easy to make I start by pan frying crushed ginger garlic and chilli in along with onion in a pan until golden brown then i put diced chicken in to the pan and fry until cooked through. I drain the oil and and the above to a pot along with chicken stock bok chow and a can of drained corn . If I want noodles with it I personally boil rice noodles and then add them to the pot . Other veggies I will some times add is carrot and celery . Making chicken stock from the frame of a roast chicken is relatively easy too submerge the frame in water add some bay leaves or other spices if desired and boil for a few hours . Set aside to cool and remove the fat off the top and then shift out the lump into a bowl or pot then you have a chicken stock . I honestly find roast chicken is one of the easiest meals to make then I make Risotto with chicken and mix vege one night or a quiche with left over roast veggies and chicken which can me good for lunches too and then the typical roast chicken meal and chicken soup can also come from part of the roast too . I also like to roast extra veggies or chickpeas at the same time for salads throughout the week
