If your chicken breasts are thick, pound them to an even thickness with a meat mallet. In a large bowl, combine the chicken with the spices, olive oil, yogurt, garlic, lemon juice, and Better Than Bouillon. Mix until evenly coated, then marinate for as long as your patience can handle. 2. Heat a large pan over medium-high heat and add a generous drizzle of olive oil. Shake off any excess marinade before adding the chicken to the pan. Cook until golden and the internal temperature reaches 165°F (74°C), about 5 to 7 minutes per side if the chicken has been flattened. Transfer to a cutting board and let rest. 3. Reduce the heat to medium-low. In the same pan, melt the butter and cook the onion, stirring occasionally, until softened and translucent. Add the garlic and spices and cook for 1 to 2 minutes until fragrant. Stir in the rice and toast for 2 minutes. Pour in the chicken stock (or hot water with the Better Than Bouillon dissolved into it), stir, and bring to a boil. Cover, reduce the heat to low, and simmer for 20 minutes, or until the rice is fluffy. Stir in the fresh parsley and lemon juice. 4. While the rice cooks, combine all of the Greek salad ingredients in one bowl and all of the tzatziki ingredients in another. Mix well. Build the bowl and enjoy! #dinneridea #easydinner #cookingathometiktoktv #tiktokviral
