All I wanted after a long Christmas holiday was a big bowl of kimchi stew. Because we've left the house for a week, we didn't have much except for some perfectly sour kimchi in the fridge and a big can of tuna in our pantry. Tuna kimchi jjigae is a little lighter and tastes cleaner(?) than the pork version, but it's still so comforting and perfect to just pour over some white rice and mix it up and enjoy. While we were eating, I suddenly remembered how my mom would always have kimchi jjigae ready whenever I came home from a long trip. Some dishes just have a way of bringing you back home. 👩🏻‍🍳 Tuna Kimchi Jjigae Recipe Ingredients •1 large can tuna (don’t fully drain the oil) •1 bowl / 1 cup kimchi •1 stalk green onion •½ onion •½ block tofu •600-700 ml water •1 tbsp gochugaru (Korean chili flakes) •½ tbsp soup soy sauce •1 anchovy stock coin •1 tbsp kimchi juice •½ tbsp sugar (only if kimchi is very sour) 1. Heat a pot with a little oil and sauté the kimchi over medium heat until fragrant. 2. Add sliced onion and green onion, and sauté briefly. 3. Pour in the water and add the tuna (no need to fully drain the oil). 4. Add stock coin, gochugaru, soup soy sauce, kimchi juice, and sugar if needed. 5. Once it comes to a boil, add the tofu. 6. Cover and boil on high heat for about 10 minutes. If it tastes a bit mild, I recommend adding a little more kimchi juice.
