Grease and line a 2 lb loaf tin (or a glass loaf dish) Rub the lemon zest into the sugar Beat in the softened butter until fluffy. Add the eggs one at a time. Fold in the flour, baking powder, and salt. Finally, stir in the milk, Greek yogurt, and lemon juice just until combined.
