Ingredients 600 g sirloin steak, cut into 3 cm pieces 700 g baby potatoes, halved 1 small onion, thinly sliced 3 tbsp melted butter 4 garlic cloves, minced 1 tbsp olive oil 1 tsp smoked paprika 1 tsp Italian seasoning ¾ tsp salt ½ tsp black pepper 120 g shredded mozzarella or cheddar 2 tbsp chopped parsley Instructions Preheat the oven to 220°C. Tear off four large pieces of heavy-duty foil and lightly grease the centers. Wash the potatoes and cut them in half. Place them in a saucepan, cover with water, and boil for 8 minutes. Drain well. They should be partly tender, not fully cooked. Cut the steak into bite-size pieces. Pat it dry with paper towels so it browns better. Slice the onion and mince the garlic. Mix the melted butter, garlic, olive oil, paprika, Italian seasoning, salt, and black pepper in a small bowl. Divide the potatoes and onions among the foil sheets. Spoon half the garlic-butter mixture over them and toss gently. Divide the steak between the packets. Drizzle the remaining garlic butter over the steak and potatoes. Bring the long sides of each foil sheet together and fold them down tightly. Fold in the ends to seal the packets while leaving a little room for steam. Place the packets on a baking sheet and bake for 15–18 minutes, depending on how well-done you prefer the steak. Carefully open the packets away from your face. Sprinkle the cheese over the steak and potatoes. Return the open packets to the oven for 3–5 minutes, until the cheese melts and the potatoes are tender. Broil for the final 1–2 minutes for extra browning. Sprinkle with parsley and serve directly from the foil with salad, green beans, or corn. Refrigerate leftovers for up to 3 days.
