Frosted brown sugar cinnamon pop tart cookies Cookies: 1/2 cup unsalted butter softened 113g 1/4 cup granulated sugar 50g 1/2 cup + 2 tbsp light brown sugar 125g 1 large egg room temp 1 1/2 tsp vanilla extract 2 1/4 cups all purpose flour 280g 1 1/2 tbsp cornstarch 12g 1/2 tsp baking soda 3/4 tsp baking powder 1/2 tsp salt 1/2 tsp cinnamon Brown sugar filling: 3 tbsp butter, softened 42g 1/2 cup light or dark brown sugar 100g 1 tbsp flour 8g 1/2 tsp cinnamon Glaze 1 1/2 tbsp melted butter (cooled slightly) 1/2 cup powdered sugar 60g 1/2 tsp cinnamon 1 tbsp Milk @Maddoughcookies Preheat oven to 350F Make the cookies: In a large bowl, add the softened butter, granulated sugar, and light brown sugar. Mix with a whisk or hand mixer until combined. Add the egg and vanilla, mix. In a medium bowl whisk together the flour, salt, baking powder, baking soda, cinnamon, and cornstarch. Pour into the wet ingredients and fold in with a rubber spatula. Set aside. Make the filling: in a small bowl combine all the ingredients and mix well. Scoop 3 tbsp of cookie dough, flatten, then scoop 2 tsp of filling. Wrap the cookie dough around the filling making sure it’s closed to prevent leakage. *I made 8 big cookies with this dough* Place 6 dough balls in a baking pan with parchment paper. Bake 10-11 minutes or until it looks set and edges are golden. Let the cookies cool down completely then add the glaze #brownsugar#cookies#baking#Recipe#bakingrecipe
