The Kirkland AP flour has a high protein % like bread flour and I know MANY people have had success with it and sourdough but I am not one of those. King Arthur bread flour has worked better all the way around for me. My Sourdough starter grew more and was much more active with KA vs the Kirkland

my house stays cold as well and i refuse to change it for some bread HOWEVERRR i have found that keeping it in the oven with the oven light on between stretch and folds and during bulk fermentation helps so much!!!! give it a try if you haven’t already! 🤍

Whenever I’m making a loaf, I let it proof in my oven with the oven light on (no heat). The light being on warms up the oven a bit more than my house is. I’ve noticed such a difference with how my loafs rise ☺️

If you crumple up the parchment paper then flatten it back out before you put your dough on it then it helps it form in the pan a little better and helps prevent it from causing creases in your bread while baking.
