Thick cabbage steaks are roasted until tender, then topped with a savory beef mixture and plenty of melted cheese for a hearty, comforting dinner. Ingredients 1 large green cabbage 1½ pounds ground beef 1 small onion, finely diced 3 garlic cloves, minced 1 tablespoon Worcestershire sauce 1 tablespoon tomato paste 1 teaspoon smoked paprika 1 teaspoon Italian seasoning ¾ teaspoon salt, divided ½ teaspoon black pepper, divided 2 tablespoons olive oil 1½ cups shredded mozzarella or provolone cheese ½ cup beef broth Chopped fresh parsley, for garnish (optional) Instructions Preheat the oven Heat the oven to 400°F (200°C). Lightly grease a 9×13-inch baking dish. Prepare the cabbage Remove any loose outer leaves from the cabbage. Slice it crosswise into four thick rounds, about 1½ inches thick, leaving the core intact to help hold each round together. Roast the cabbage Arrange the cabbage rounds in the prepared baking dish. Brush both sides with olive oil and season with half of the salt and pepper. Bake for 20 minutes. Cook the beef While the cabbage roasts, cook the ground beef and diced onion in a large skillet over medium-high heat for 6–8 minutes, breaking the beef into small crumbles. Drain any excess grease. Season the filling Stir in the garlic, Worcestershire sauce, tomato paste, smoked paprika, Italian seasoning, and the remaining salt and pepper. Cook for 1–2 minutes, stirring frequently. Add the broth Pour in the beef broth and simmer for 3–4 minutes, until the mixture is moist and most of the liquid has reduced. Assemble Remove the cabbage from the oven. Spoon the beef mixture evenly over each cabbage round, gently pressing it into the center. Bake again Sprinkle the shredded cheese over the tops and return the dish to the oven. Bake for 15–20 minutes, or until the cabbage is fork-tender and the cheese is melted and lightly golden. Finish and serve For a deeper golden top, broil for 1–2 minutes if desired. Let the cabbage burgers rest for 5 minutes, garnish with chopped parsley, and serve hot.
