@momofuku: the prince of soubise is most famous for losing a crucial battle in the third silesian war, and devoted himself to making onion sauces thereafter. but you can be most famous for making delicious food, starting with this sauce, which is like if alfredo and french onion soup had a baby. i think this would be delicious tossed with some gnocchi, since the sauce gets so creamy. either way, who would've thought that we were all an onion away from pure flavor?
this sauce, which is most certainly not soubise, looks yummy.

I've found that if you put some strong dijon mustards in every sauce that has a lot of onions, the sauce becomes more "alive" because onions give an extremely sweet result that I don't prefer...
