sourdough Pistachio Cinnamon Rolls Ingredients Dough • 340 g flour (2¾ cups) • 177 g lukewarm milk (¾ cup) • 40 g sugar (3 tbsp) • 1 tsp salt • 110 g sourdough starter (½ cup) • 1 egg • 50 g unsalted butter, softened (3½ tbsp) Filling Pistachio butter, 1 tbsp cinnamon powder, chopped pistachios Frosting 90 g cream cheese, 4 tbsp unsalted butter, 7 tbsp powdered sugar, 1 tsp pistachio butter Instructions 1. Mix all dough ingredients except butter and salt, cover and rest 15 minutes, then add the butter and salt and mix until combined. No kneading needed. 2. Cover and let the dough rise for about 4 hours, until about 70% risen. 3. Lightly flour your surface. Place the dough on it and gently stretch into a rectangle, keeping it slightly thick. 4. Spread pistachio butter over the dough, sprinkle 1 tbsp cinnamon powder and chopped pistachios, then roll the dough and cut into 6 rolls. 5. Place the rolls in a baking dish and let rise 2 hours. 6. Pour 1 tsp heavy cream over each roll and bake at 375°F / 180°C for 35 minutes. 7.
