Easy Chicken Katsu  I read somewhere that something like 30% of people order the katsu curry at Wagamamas - I'm not surprised, I've never actually been to Wagamamas, but I do love a katsu!  This is a really easy version that tastes incredible - it also freezes really well, so I'd definitely recommend making a double batch! If you don't have time to bread the chicken, just use frozen breaded fillets and microwave rice for the ultimate cheat's dinner! I've written up the recipe below, I'd love to know if you're going to try this! A x For the chicken: 3 large chicken breasts  A handful of flour 1 large egg beaten 70g panko breadcrumbs Oil for frying For the sauce: Onion finely chopped 2 cloves garlic finely chopped 1 tsp ginger paste 1 tbsp honey 1 tbsp soy sauce 1 tbsp medium curry powder 2 tbsp flour 250ml veg stock 40ml milk Cut the chicken breasts in half lengthways. Place the flour, beaten egg and breadcrumbs in separate bowls. Place one of the chicken breasts in the flour, turning it over until coated. Dip the chicken in the beaten egg and then roll it in the breadcrumbs until coated. Set aside and repeat for the remaining chicken. Heat a good glug of oil in a large non-stick pan. When it's spitting hot, add the chicken. Fry for 3-4 minutes each side until all the chicken is cooked through (time will depend on how thick your chicken is) Whilst the chicken is frying make the sauce: Heat a drizzle of oil in a saucepan and add the onion. Fry for 5 minutes on a medium heat until soft. Stir in the garlic, ginger paste, soy sauce, honey and curry powder and fry for a further minute. Stir in the flour. Slowly add the veg stock a little at a time, stirring continuously on a low heat to remove lumps and bringing it to the boil each time before adding more stock. Use a whisk if you need to. When all of the stock has been used, season with ground black pepper -Stir in the milk.
