This orzo is light, creamy, and packed with garlicky, herby summer flavors. You can certainly eat this as is or serve it with your favorite protein (grilled shrimp work beautifully with this!!). Here’s how it comes together: Ingredients: - 1lb orzo  - 1 medium-large yellow summer squash, cut into 1/2 to 1 inch pieces. (I cut in them in half lengthwise and cut each half into quarter or thirds lengthwise and chop from there!) - 1 medium-large zucchini, cut unto 1/2 to 1 inch pieces) - 7.5oz container whipped garlic & herb cream cheese - 32oz container chicken or veggie broth - 2 Tablespoons grated Parmesan cheese + extra for topping  - 1 Tablespoon salted butter  - 1.5 Tablespoons red wine vinegar - 2 tsp salt + extra for seasoning - Ground pepper to taste  Directions: 1. In a large, sprayed nonstick pan, saute chopped squash over medium to medium-high heat, seasoned with a sprinkle of salt & pepper. Saute, stirring frequently, until squash start to soften, but are not cooked all the way through (about 3-5 minutes). Remove from pan and set aside.	 2. Lightly spray the pan again, pour in the uncooked orzo and 1 Tablespoon of butter. Stir until butter is melted and orzo is coated, with pieces starting to toast/achieve a golden brown color (about 3-minutes). 	 3. Pour in all of chicken broth, red wine vinegar, and 2 teaspoons of salt. Stir until everything is fully incorporated and bring orzo broth mixture to a light boil. You may need to lower the heat to keep the light boil.	 4. Stir every 2 minutes or so, ensuring that you’re moving the orzo off the bottom of them pan, until most of the liquid is gone (about 8 minutes). 5. Add the whipped garlic and herb cream cheese and 2 Tablespoons of grated parm. Stir until cream cheese is fully melted and incorporated into the orzo. 	 6. Pour saute squash back in. Stir. Taste and season with salt & pepper to your liking.	 7. Eat as is or top with extra grated parm, red pepper flakes, and/or fresh parsley.
