Another tip is look at travel agency websites with packages. They frequently have day to day itineraries. Gives a good starting point of best sites and the logistics of getting to each spot.

A good way to know what to do in a country or city is by looking at some tour-operators’ websites, they’re experts so Check out their itineraries and you may find some really interesting stuff

instead of giving cities their own layer I split by category. like touristy POIs, cafes, restaurants, accommodations+important transit stns etc. Then while traveling if you're suddenly feeling like coffee you can hide the other layers. Doing by city is a waste, you're already zoomed in on the map so you're not seeing other city's stuff anyways.
