A series where I pick a supermarket and see just how much flavour I can squeeze out of a small spend 💰 This week’s shop was Aldi, and this Creamy Paprika Chicken Pasta comes in at just £1.80 per portion. Rich, creamy, packed with flavour and finished with crispy garlic bread for dunking 🧄🥖 Serves 4 Cals 743 | Pro 42 | Carb 86 | Fat 24 Ingredients ~ 1 onion 1/2 red, yellow and orange pepper 500g chicken mince 2 tsp garlic purée 1 tbsp paprika 1 tbsp tomato purée 1 tin chopped tomatoes 1 tbsp honey 150ml beef stock 300g pasta 125g mascarpone 40g parmesan 4 slices reduced fat garlic bread Method ~ *Finely dice onion and peppers, add a microwave safe bowl with a splash of water, cover and microwave for 3 mins on high, then drain *Add chicken mince to a pan with the softened onion peppers and cook till the chicken is no longer pink *Add garlic purée, paprika, tomato purée and honey, let this cook for 2 mins before adding stock and chopped tomatoes, simmer whilst you cook the pasta *Air fry or bake the garlic bread *Drain the pasta and reserve some cooking water *Add the pasta to the chicken with enough cooking water to make a sauce, stir through half the parmesan, dish up with garlic bread and remaining cheese on top Hope you enjoy!
