It heats up so fast, is super easy to clean, and gives the most incredible crunch every time! Crispy Golden Arancini (My Signature Rice Balls) Yields: 16 Rice Balls Ingredients • The Base: 1 cup Arborio rice + 3 cups water (or low-sodium chicken broth) • The Binder: 2 Large eggs • The Creamy Mix: 2 tbsp Mascarpone cheese • The Cheese: 1 cup shredded mozzarella, ½ cup grated Parmigiano • The Heart: Cubed mozzarella or diced string cheese • The Crunch: Breadcrumbs (for coating) + Vegetable oil (for frying) • Seasoning: Kosher salt Instructions 1. Cook & Cool: Bring liquid to a boil, add rice, and simmer on low for 20 minutes until tender. Spread the rice on a parchment-lined sheet and let it cool completely. 2. Mix & Shape: In a large bowl, combine the eggs with the cooled rice. Stir in the Parmigiano, shredded mozzarella, and mascarpone. Shape the mixture into sixteen 1 ½-inch balls. 3. Stuff & Coat: Press your finger into the center of each ball, insert a mozzarella cube, and pinch the rice back over to seal it. Roll each ball thoroughly in breadcrumbs. 4. Chill: Place on a baking sheet, cover loosely, and refrigerate for at least 1 hour (this ensures they hold their shape while frying). 5. Fry: Heat ½ inch of oil in a pan to 350°F.
