@daniela_dish: Late Summer Zucchini Sausage Soup It’s always soup season at our house and this zucchini sausage soup is not only loaded with fresh summer vegetables, it’s absolutely delicious. It’s a one pot meal that’s super easy and it’s perfect for late summer or even a back to school meal. Keep this recipe for making now and save it for the months to come, you will love it. #latesummersoup #zucchinisausagesoup • 3 tablespoons olive oil 3/4 lb Italian sausage mild or hot if you want heat 1/2 onion chopped 2 celery ribs chopped 1 carrot chopped 1/4 c white wine 4-5 Roma tomatoes diced 4-5 cups chicken broth Salt and pepper 2 tablespoons fresh parsley 2 tablespoons fresh basil 2 medium zucchini diced 1/2c orzo 1/3 c heavy cream Fresh grated Parmesan Heat the olive oil in a soup pot and add the sausage to brown. Add the onion, celery and carrot and let it cook for a few minutes. Pour in the wine to deglaze the pot add the tomatoes. Let them cook for a few minutes and season with salt and pepper. Stir in the chicken broth and parsley and basil. Simmer for 10 minutes. Increase the heat and add the zucchini and orzo. When the soup bubbles reduce to a simmer and cook until the zucchini and orzo are tender, stirring frequently so the orzo doesn’t stick to the bottom of the pot. When the orzo is tender add the cream and continue simmering for an additional 5 minutes. Check and adjust seasoning and top with freshly grated Parmesan.
