I have this theory that the more effort I put into a meal, the less likely it is to get touched, and honestly the evidence is pretty strong at this point. So I stick to easy, and I’ve made my peace with it. These spinach artichoke pinwheels are a good example. It’s a tub of spinach dip doing three jobs at once — it’s the sauce, the seasoning, and the vegetable — plus a can of crescent rolls and some deli turkey you tear up with your hands. Eight minutes of actual work, five ingredients, one pan, and nothing gets cooked before it goes in the oven. There’s something green in there and she has never once asked me about it. They’re also great for lunchboxes, they keep in the fridge all week, and they freeze really well if you want a stash. INGREDIENTS 1 tube refrigerated crescent rolls 1/2 cup spinach artichoke dip 5–6 oz deli turkey 1 cup shredded mozzarella Olive oil spray Marinara, for dipping HOW TO MAKE THEM Heat the oven to 375°F and line a sheet pan with parchment. Unroll the crescent dough and pinch the perforations closed so it’s one solid sheet. Don’t skip this part — it’s what keeps them from unraveling. Spread the spinach dip over the dough, leaving about an inch bare along one long edge. Tear the turkey over the top, then add the mozzarella. Roll it up from the long side, finishing on the bare edge. Press to seal, seam side down. Slice into rounds about an inch thick with a serrated knife, sawing gently. Arrange cut side up on the sheet pan and spray the tops with olive oil. Bake 15–20 minutes, until golden on top. Let them rest 5 minutes, then serve with warm marinara for dipping. TO FREEZE: Cool completely, freeze in a single layer until firm, then move to a freezer bag with parchment between the layers. They keep up to 3 months.
