@thesonnerstead: Peach season is here. 🍑 This is the method I use for canning peaches so we can enjoy them all year long. I chose a medium syrup because it’s sweet without overpowering the fruit. To prevent browning: 🍋 Mix ½ cup bottled lemon juice with 1 gallon of cold water and place your sliced peaches in the solution while you work. Syrup options: 🍑 Light:2 cups sugar + 5 cups water 🍑 Medium:3 cups sugar + 6 cups water *(what I used)* 🍑 Heavy:4 cups sugar + 6 cups water My process: • Blanch peaches 30–60 seconds and peel • Slice and place in the lemon water • Pack raw into hot jars • Cover with hot syrup, leaving ½” headspace • Remove air bubbles • Water bath 25 minutes for pints (adjust for your altitude) Nothing fancy, just preserving the harvest so we can enjoy fresh peaches long after the season is over. 🍑🌿 Waterbath Canner: @rootsandharvest link in my bio #homesteadlife #canningandpreserving #harvestseason #selfsufficient #slowliving
