The perfect cozy meal for chilly evenings! 🤍🍲 Ingredients: • 1 tbsp olive oil • 6 sausages (about 400g), casings removed • 1 onion, diced • 2 carrots, sliced • 2 celery stalks, sliced • 2 garlic cloves, minced • ½ tsp dried thyme • 2 bay leaves • 3 tbsp all-purpose flour (GF option) • 4 cups chicken or vegetable broth • ½ cup wild rice • 3 medium potatoes, peeled & cubed • 1½ cups half-and-half or light cream (i used plant-based heavy cream) • Salt & pepper to taste • Fresh parsley for garnish Directions: 🤎 Brown the sausage in olive oil, then remove from the pot. 🥕 Sauté the onion, carrots, celery, garlic, and thyme until softened. 🥣 Stir in the flour and cook for 2 minutes. 🍗 Gradually whisk in the broth, then add the sausage back along with the bay leaves and wild rice. Simmer for 30 minutes. 🥔 Add the potatoes and cook another 15 minutes, until tender. 🥛 Stir in the cream, season with salt and pepper, and heat through (don’t let it boil). 🌿 Garnish with fresh parsley and serve warm with crusty bread!
