@cookingwithmekady: Albondigas Soup Ingredients For the Meatballs: * 2 lbs ground beef * 1 cup white rice * 1 egg * 1 bunch cilantro, chopped (reserve some for garnish) * 1/2 white onion, finely chopped * Garlic powder, to taste * Salt, to taste * Black pepper, to taste For the Soup: * 6 cups water * 2 cups chicken broth * 2 tbsp minced garlic * 1 (8 oz) can roasted garlic tomato sauce * Chicken bouillon, to taste * Garlic powder, to taste * Salt, to taste * Black pepper, to taste * 2 zucchini, chopped * 1 (15 oz) can diced potatoes, drained * 6 mini frozen ears of corn For Serving: * Chopped cilantro * Lime or lemon wedges Instructions 1. In a large bowl, combine the ground beef, white rice, egg, chopped cilantro, chopped onion, garlic powder, salt, and pepper. Mix until just combined, then roll into medium-sized meatballs. 2. In a large pot, combine the water, chicken broth, minced garlic, and roasted garlic tomato sauce. Season with chicken bouillon, garlic powder, salt, and pepper. Bring the broth to a boil. 3. Carefully add the meatballs to the boiling broth. Cover the pot, reduce the heat to a simmer, and cook for 30 minutes. 4. Add the chopped zucchini, drained diced potatoes, and frozen mini corn. Cover again and continue simmering for 15 minutes, or until the vegetables are tender and the meatballs are fully cooked. 5. Ladle the soup into bowls and garnish with fresh chopped cilantro. I put in the potatoes and corn first, after 10 min I add the rest of the vegetables for 10 min so they don't over cook.

I made mine like your recipe for years but my friend’s Mexican grandma told me to always brown/fry my meatballs on all sides before putting them in the broth the flavor is way better
