CATCH, COOK, CREATE 🔁 Tako (Octopus) In Hawaii, tako can be found in rocky/sandy areas. They are well camouflaged and hide in holes they build in the reef by strategically moving around rocks and sand. A tako hole can be found by looking for overturned rocks, sand and discarded shells the octopus will leave at the entrance. We created smoked tako nigiri, paired with salmon eggs, finger lime pearls and limu kohu. In this series, I’ll be going back to my roots; sourcing and catching the fish, preserving eternal memories with gyotaku art and also creating dishes with the printing subjects using knowledge I acquired over the years in the sushi and culinary industry. Just a small glimpse into the lifestyle and culture I and many others are fortunate to embrace, being born and raised here in Hawaii.
