Authentic Ghanaian Shito Recipe 🌶️🇬🇭 GHANAIAN SHITO (PEPPER SAUCE) INGREDIENTS - Cooking oil - Onions - Ginger - Garlic - 1 habanero pepper - Whole black pepper - Aniseed - Tomato paste - Chili powder - Shrimp powder - Dried herring powder - 2 shrimp stock cubes METHOD 1. Peel the onions, ginger, and garlic. 2. Add the onions, ginger, garlic, habanero pepper, whole black pepper, aniseed, and some cooking oil to a blender. Blend until smooth. If making a large batch, blend in batches. 3. Heat a generous amount of cooking oil in a large pan. 4. Pour the blended mixture into the pan and cook over medium heat. 5. Stir continuously to prevent it from sticking to the bottom or burning. 6. Continue cooking until most of the water has evaporated and the mixture starts to darken in color. 7. Add the tomato paste and mix well. 8. Cook for a few more minutes while stirring. 9. Add the chili powder, shrimp powder, dried herring powder, and shrimp stock cubes. 10. Stir everything together thoroughly. 11. Continue cooking and stirring regularly. Shito takes time to cook properly, so patience is important. 12. As it cooks, the mixture will become darker and the water will gradually evaporate. 13. Continue cooking until the shito becomes very dark in color and there is no watery liquid left. 14. The oil will begin to separate and rise to the top. This is a sign that the shito is ready. 15. Remove from the heat and allow it to cool completely before storing. STORAGE TIPS - Store in clean, dry glass jars. - Always use a clean, dry spoon when serving. - Keep a layer of oil on top of the shito, as the oil helps preserve it. - If properly cooked, stored in a clean jar, and covered with oil, shito can stay on the kitchen counter for several weeks. - For longer storage, keep it in the refrigerator, where it can last for 6 to 12 months. - If you notice mold, an unusual smell, or any signs of spoilage, discard it immediately. - If you do not want too much oil when serving, simply scoop from underneath the oil layer, but do not remove the oil from the jar as it helps preserve the shito. #ghanianshito #ghanianfood #AfricanFood #shitorecipe #homemadefood
