Creamy Roasted Sweet Potato Soup (The recipe you NEEDED!) Makes 2-3 servings •1 large garnet sweet potato •1 large yellow onion •1-2 tbsp ghee, extra virgin olive oil, or refined coconut oil •1-2 tsp salt (depending on sodium in your broth of choice!) •3 cups chicken broth or vegetable broth •½ cup canned coconut milk OR heavy whipping cream •2 large canned or jarred bell peppers (optional) •5-6 large garlic cloves •2 tbsp ghee, extra virgin olive oil, or refined coconut oil •2 scoops collagen powder (optional) •1 tbsp nutritional yeast •7-10 sprigs fresh thyme leaves (approx 1 tbsp chopped) •Freshly grated nutmeg as desired - Highly recommend! (do not use jarred) •A small dash of cinnamon (optional) 1️⃣ Start off by washing all of your veggies & herbs 2️⃣ Peel and cut your sweet potatoes and onion into medium/large diced pieces. Set your oven to 400 degrees F 3️⃣ Dressing your veggies with coconut oil or ghee and combine on a sheet pan by keeping the veggies separate if possible 4️⃣ Add to your oven and roast for 20 minutes 5️⃣ While your veggies cook, use the base (near the heal of your knife) and press the flat side of it against your individual garlic pieces. Remove the skin and add your cloves to a sheet of aluminum foil and dress it with olive oil or ghee. Tightly close up the aluminum foil and add to your sheet pan 6️⃣ While your veggies are cooking pull the leaves off your thyme and combine them in your blender 7️⃣ Once the veggies are completely cooked, immediately blend all ingredients in a high-speed blender except your salt & nutmeg 8️⃣ Once blended taste & adjust with more salt, nutmeg, or cream. Follow with freshly grated nutmeg (not jarred!) 9️⃣ Freeze these soups for future meals into individual servings! Tip: If freezing, we recommend using coconut milk vs. heavy whipping cream. While you can freeze both, coconut milk will hold up better upon reheating. One night before enjoying the freezer meal, defrost it in your fridge and reheat it on the stovetop, covered on low. #wellnesstiktok #recipesoftiktok #recipevideo #soupseason #MomsofTikTok #parentsoftiktok
