In 1936, bartender Barney Burke published Burke’s Complete Cocktail & Drinking Recipes. On a single page, he listed Between the Sheets No. 1 and Between the Sheets No. 2. Same name. Two completely different cocktails. No. 1 combined brandy, dry gin, Curaçao, and lemon juice. No. 2 replaced the gin with rum and the Curaçao with Cointreau—the version that eventually became the modern classic. Why did both exist? Because the Between the Sheets was still evolving. During the 1920s and 1930s, bartenders across Europe were making different versions, and Barney Burke simply documented both recipes as they were being served.
