@mannandcobakeshop: One of Tokyo’s most talked-about bakeries… and I had to see what the hype was about. I’m Donut? has become famous for its incredibly soft, almost melt-in-your-mouth doughnuts, and after trying them, I understood why. Unlike a traditional yeast doughnut, these have more of a brioche-style dough. The enriched dough gives them a light, airy crumb with a soft, almost cloud-like texture that practically melts in your mouth. I tried a few different flavours. The strawberries and cream was delicious, although the whipped cream had split slightly. It was a small detail and didn’t take away from the experience because the other doughnuts more than made up for it. My favourite was easily the pistachio. The nutty flavour came through beautifully, and it was perfectly balanced. The nama cream fillings were also incredibly smooth and light, adding richness without making the doughnuts feel heavy. As a pastry chef, I always appreciate when something as simple as a doughnut is executed exceptionally well. Sometimes, it’s not about adding more, it’s about perfecting the fundamentals.
