You nailed it Sophie.. When I am in Ft Lauderdale I go to a restaurant, been going there for 20 years.. One day the owner asked why do come to my restaurant.. I told him I like what his waiters and waitress wear.. They wear t shirts not advertising the restaurant ... on the front and back it says " Be Nice" I love this attitude as I love u❤️😎

JEWS AROUND THE WORLD Episode 23: Turkey (Boyos de Espinaka) 🇹🇷  - 270g plain flour - 0.8 tsp salt - 120ml warm water - 50ml neutral vegetable oil - 680g fresh spinach, washed - 350g feta cheese, crumbled - 1.3 large eggs - 0.7 medium onion, very finely diced - 1.3 tbsp olive oil - 0.3 tsp ground nutmeg - 0.7 tsp black pepper, freshly cracked - 0.7 egg yolk mixed with 1 tbsp water for egg wash - 1.3 tbsp sesame seeds for topping 1. Make the dough: combine plain flour with salt in a large bowl. Make a well in centre and pour in warm water and neutral oil. Mix with a fork until it comes together. Turn onto a clean surface and knead for 8-10 mins until completely smooth and elastic. Dough should feel soft and silky with no rough patches 2. Shape the dough into a ball, brush all over with oil and cover with clean damp tea towel. Leave to rest at room temperature 3. Cook spinach, heat olive oil in medium heat. Add medium onion and cook till soft and translucent - about 8 mins. Add in fresh spinach in batches and wilt down completely. Season with ground nutmeg and black pepper  4. Tip the cooked spinach onto a clean kitchen towel and squeeze out every single drop. Finely chop the squeezed spinach and place into a bowl. Add feta and eggs and mix thoroughly  5. Preheat your oven to 375’C (190°C). Line baking tray with baking paper, divide the rested dough into 12 equal balls. Working with one ball at a time and keeping the rest covered, roll out on an oiled surface 6. Place a generous line of filling along one edge of the dough sheet, leaving a small border 7. Roll the filled edge over itself tightly to encase the filling, then continue rolling the entire sheet into a thin rope. Coil the rope into a tight spiral and pinch the end underneath to seal. Place on the lined baking tray. Repeat with remaining dough and filling 8. Beat the remaining egg from large eggs with a tablespoon of water. Brush each boyo generously with egg wash and scatter sesame seeds for topping over the top 9. Bake for 30-35 mins until deeply golden all over and the layers are visibly flaky and separated. Allow to cool on a wire rack for at least 15 minutes before serving 10. ENJOY
