@cookwithcourt_: PAD KRA PAO GAI (Thai Garlic + Chilli Basil Chicken) 🌶️🌿🇹🇭 460 CALS 39G PROTEIN I know this doesn’t look like much but let me tell you this dish is SO good. If you’ve never tried this before then I urge you to try something new and give it a go, you will not be disappointed 🤭🤤 Ingredients (serves 2-3): 500g chicken mince 3 red chillies (mine weren’t that hot) 6 cloves garlic Drizzle oil Handful green beans Pack jasmine rice (I use veetee always) Handful fresh basil (if you can get holy basil or Thai basil this works best) 2 eggs Sauce: 1tbsp light soy 1tbsp dark soy 1tbsp oyster sauce 1tsp fish sauce 1tbsp palm sugar (or brown sugar or honey) Method: Fry garlic and chilli for 2 mins in a hot pan, being careful not to burn the garlic. Then add the chicken mince and sautee until all the juices have gone and the chicken is starting to crisp slightly. Then add the green beans and fry for a further few minutes. Then add the sauce and combine. Add basil and stir through. Serve over jasmine rice with a crispy egg. Enjoy! ♥️ #EasyRecipes #DinnerIdeas #highprotein #thairecipe #chickenrecipes
Pad kra pao translates to ‘stir fry holy basil’ so the purists will say only holy basil. But the Thai basil is a nice point of difference as holy basil is hard to find unless you grow it.

That's a nice attempt Courtney. Can consider using more fish sauce without the light soy sauce & oyster sauce as fish sauce provides the saltiness and flavour without being too cloying or sweet, also since you're already using palm sugar. I find that oyster sauce may make a certain dishes veer off in terms of what its flavour is intended to be as it's a very pronounced flavour.

You can’t eat it every day. I’ve tried to. I have though made these dishes in the order over the last few days. Pad see eww. That larb chicken thing. Not a fan. Pad Thai. Green curry and tonight was red curry. Washed down with the lovely Thai iced tea. Oh yeah and prawn Tom yum. What next? 😂
