Ep. 12 of Sardinian Bites: Cardinali alla crema 💛 INGREDIENTS (for around 15 cakes) For the cakes 3 eggs 200g caster sugar 100ml milk 100ml neutral vegetable oil 250g 00 flour 16g baking powder 2 tsp lemon extract Pinch of salt For the pastry cream 500ml whole milk 4 egg yolks 100g caster sugar 40g cornflour Peel of 1 lemon To assemble Alchermes, as needed METHOD 1. Preheat the oven to 180°C. 2. Add the eggs and sugar to the Thermomix bowl and mix for 2 min / speed 4. 3. Add the milk, vegetable oil and lemon extract and mix for 20 sec / speed 4. 4. Add the flour, baking powder and salt and mix for 20 sec / speed 4, scraping down the sides if needed. 5. Divide the batter between muffin cases, filling them around ⅔ full. 6. Bake at 180°C for approximately 25 minutes, or until golden and a skewer inserted into the centre comes out clean. Leave to cool completely. For the pastry cream 1. Heat the milk with the lemon peel until just below boiling. Remove from the heat and leave to infuse for a few minutes. 2. In a separate bowl, whisk the egg yolks with the sugar, then add the cornflour and mix until smooth. 3. Slowly pour in the warm milk while whisking. Return everything to the saucepan and cook over medium-low heat, stirring continuously, until thickened. 4. Transfer to a bowl, cover the surface directly with cling film and leave to cool completely. To assemble 1. Cut a small cone-shaped piece from the top of each cake and set it aside. 2. Lightly soak the inside of each cake with Alchermes, then fill generously with pastry cream. 3. Soak the piece of cake you removed in Alchermes until bright red, then place it back on top.
