Ingredients * 1 whole chicken (about 4–5 pounds) * Olive oil * 1 bag baby potatoes * 1 onion, halved * 1 whole garlic, cut in half crosswise * 1 lemon, halved * Fresh rosemary * Dried oregano * Paprika * Ground cumin * Garlic powder * Salt * Black pepper Directions 1. Preheat your oven to 425°F. 2. Pat the chicken completely dry with paper towels. 3. Gently separate the skin from the breast and thighs. Season underneath the skin with paprika, cumin, garlic powder, salt, and black pepper. 4. Season the outside of the chicken with the same spices and drizzle lightly with olive oil. 5. Fill the cavity with:     * ½ head of garlic     * ½ onion     * ½ lemon     * Fresh rosemary     * Dried oregano     * Salt and pepper 6. Add a drizzle of olive oil to a cast iron skillet or heavy baking pan. Arrange the baby potatoes, the remaining onion, the remaining half head of garlic (cut side down), and the remaining half lemon in the pan. 7. Place the chicken on top of the vegetables. 8. Roast for about 1 hour, or until the thickest part of the thigh reaches 165°F. 9. Let the chicken rest for 10–15 minutes before carving. ✨ And whatever you do… don’t throw away the bones!
