Flight attendant here. This is caused by something called Clear Air Turbulence (CAT) and it's the reason we tell you to keep your seatbelt fastened even when the seatbelt sign is off. CAT can be unpredictable and trust me you do not want your head hitting the ceiling while at 30.000ft.
