(+ salted water for soaking the eggplant) • Dried garlic — 1 tsp. • Smoked paprika — 1 tsp. INSTRUCTIONS: 1.Peel the potatoes and cut them into medium-sized cubes. 2.Cut the eggplant into medium cubes and soak them in salted water for 30 minutes. Drain well before cooking. 3.Heat the vegetable oil in a large skillet over medium heat. 4.Add the potatoes and cook until they begin to turn golden. 5.Add the eggplant and continue cooking, stirring occasionally. 6.Season with salt, dried garlic, and smoked paprika.
