I lived in Brazil for 10 years and although I absolutely loved the food, I couldn’t find a good piece of corn to save my life. I was in Rio though not the Amazon. I’m so jelly of your life but wish you the best.

You can cook "mokimo" using pumpkin leaves (Boil young corn(undry corn) with potatoes and add these leaves then mash them together...later, shallow fry that with a good amount of onions and it's the most delicious dish ever) ... can go with beef and salad
