Recipe below: -1 tbsp olive oil -1 small brown onion, finely chopped -2 garlic cloves, crushed -60g baby spinach, coarsely chopped -500g extra-lean chicken mince -50g sun-dried tomato halves, fat free (no oil), finely chopped -75g (1 1/4 cups) panko breadcrumbs -40g (1/4 cup) shredded parmesan -2 tbsp sun-dried tomato pesto -2 tbsp chopped fresh basil -2 tbsp thickened cream -2 eggs -2 1/2 frozen extra flaky puff pastry sheets, just thawed -2 tsp dried oregano leaves -Hot honey or sweet chilli sauce, to serve Heat oil in a medium frying pan over medium heat. Add onion and cook, stirring, for 5 minutes or until soft. Add garlic and spinach and cook, stirring, for 3-4 minutes or until spinach is wilted. Set aside for 5 minutes to cool slightly. Place chicken, spinach mixture, sun-dried tomato halves, breadcrumbs, parmesan, pesto, basil, cream and half of eggs in a bowl. Mix until well combined. Preheat oven to 220°C/200°C fan forced. Line 2 baking trays with baking paper. Lightly whisk remaining egg in a bowl. Cut 2 whole sheets of pastry in half. Arrange one-fifth of the mince mixture along the centre of each pastry half. Brush 1 long edge of each pastry half with a little whisked egg. Fold the pastry over the filling to enclose and form long rolls, pressing the edge to seal. Cut each long roll into 4 even pieces. Arrange the sausage rolls, seam side down, on the prepared trays. Brush the tops with more egg. Use a small, sharp knife to pierce the tops a few times to allow steam to escape while cooking. Sprinkle with oregano. Bake for 25-30 minutes or until cooked through and golden. Serve the sausage rolls warm with hot honey or sweet chilli sauce alongside. #sausagerolls #sausageroll #marrymechicken
