They are pan-fried first, then gently steamed, creating the perfect contrast of textures. A classic Japanese comfort food that’s easy to make at home. Ingredients (Makes 24–30 dumplings) Filling • 250 g ground pork or chicken • 1 cup napa cabbage, finely chopped • 2 green onions, finely chopped • 2 cloves garlic, minced • 1 tsp fresh ginger, grated • 1 Tbsp soy sauce • 1 tsp sesame oil • 1/2 tsp salt • 1/2 tsp black pepper For Assembly • 24–30 gyoza wrappers • Water (for sealing) For Cooking • 1–2 Tbsp neutral oil • 1/4 cup water (for steaming) Instructions 1. In a bowl, combine the ground meat, chopped cabbage, green onions, garlic, ginger, soy sauce, sesame oil, salt, and black pepper. Mix gently until just combined. 2. Place one gyoza wrapper in your hand. Add about 1 teaspoon of filling to the center. 3. Dip your finger in water and moisten the edge of the wrapper. Fold in half and pleat the edges to seal tightly. Repeat with remaining wrappers. 4. Heat oil in a non-stick or cast-iron skillet over medium heat. Arrange the gyoza in a single layer, flat side down. 5. Cook for 2–3 minutes until the bottoms are golden brown. 6. Carefully add the water to the pan and immediately cover with a lid. Steam for 4–5 minutes, until the filling is cooked through and the water evaporates. 7. Remove the lid and cook for another 1–2 minutes to re-crisp the bottoms. Simple Dipping Sauce • 2 Tbsp soy sauce • 1 Tbsp rice vinegar • 1 tsp sesame oil • Chili oil or chili flakes (optional) Tips • Do not overfill the wrappers to prevent tearing. • Napa cabbage can be lightly salted and squeezed to remove excess moisture for a juicier filling. • Gyoza are best served hot, straight from the pan. #gyoza #japanese #cusine #mspinaq
