@thefitlondoner: FIG + WALNUT BANANA BREAD The first figs from our cottage fig tree deserved something special, and this loaf might be my favourite banana bread yet?? It's unbelievably soft, naturally sweetened with honey, packed with juicy figs and crunchy walnuts, and perfect with a thick layer of butter while it's still warm. Ingredients ▫️3 large or 4 small ripe bananas ▫️80g melted coconut oil ▫️60g honey ▫️2 eggs ▫️1 tsp vanilla extract ▫️60g 0% thick yoghurt ▫️230g plain flour ▫️1 tsp bicarbonate of soda ▫️¼ tsp salt ▫️½ tsp ground cinnamon ▫️3-4 ripe figs, chopped ▫️A handful of walnuts, roughly chopped Method: 1. Preheat your oven to 180°C fan and line or grease a loaf tin. 2. Mash the bananas, then whisk in the coconut oil, honey, eggs, vanilla and yoghurt until smooth. 3. Add the flour, bicarbonate of soda, salt and cinnamon, then gently fold together until just combined. 4. Fold through most of the figs and walnuts, reserving a few to scatter over the top. 5. Pour into your loaf tin and top with the remaining figs and walnuts. 6. Bake for 50-55 minutes, or until a knife or skewer inserted into the centre comes out clean. 7. Leave to cool for 15 minutes before slicing (if you can wait that long, I couldn’t!). Keeps beautifully in an airtight container at room temp for 3 days, or in the fridge for over a week.
