Preheat oven to 325°F. 2. Place six 6-ounce ramekins or custard cups inside a deep baking dish. 3. In a medium saucepan, heat the milk over medium-low heat until hot but not simmering. You should see steam rising from the milk, but it should not boil. 4. In a large bowl, whisk together the eggs, sugar, salt, and vanilla until smooth. 5. Very slowly pour the warm milk into the egg mixture while whisking constantly to prevent the eggs from curdling. 6. For the smoothest custard, strain the mixture through a fine-mesh sieve. 7. Divide the custard evenly among the ramekins. 8. Lightly sprinkle the tops with freshly grated nutmeg. 9. Carefully pour hot water into the baking dish until it reaches about halfway up the sides of the ramekins. 10. Bake for 40–70 minutes, or until the custards are set around the edges but still have a slight jiggle in the center. A knife inserted near the edge should come out clean. 11. Carefully remove the ramekins from the water bath and place them on a wire rack to cool. 12.
