If you’ve never tried Kerala-style prawn biryani, this is your sign. Marinate the prawns with all marinade ingredients and set aside for 10–15 minutes. 2. Heat coconut oil + ghee in a wide pan. Add cardamom pods and bay leaf. Once aromatic, discard the whole spices. 3. Add sliced onions and chopped green chili. Sauté with a pinch of salt till golden brown. 4. Add tomatoes and cook until soft. 5. Add marinated prawns and cook for 3–4 minutes. Sprinkle a bit more of the spice mix if desired. 6. Pour in coconut milk, let it simmer. Adjust salt and add a pinch of sugar if needed. 7. Stir in chopped coriander, reduce flame, and layer the rice on top. 8. To make crispy onions: Spread thinly sliced onions on a microwave-safe plate, sprinkle with a pinch of salt, brush with oil, and microwave on high in intervals of 3–4 minutes (stirring in between) for 12–14 minutes until crisp and golden. 9. Garnish the biryani with mint, coriander, crispy onions, and roasted cashews. Cover tightly and cook on the lowest flame for 5–7 minutes.
