Ingredients: 2–3 pounds boneless skinless chicken thighs 2 carrots, sliced 2 celery stalks, sliced 1 onion, sliced 1 cup chicken stock 1 envelope au jus mix 1 envelope chicken gravy mix 1 teaspoon garlic powder 1 teaspoon onion powder 1/2 teaspoon black pepper Directions: Place the boneless skinless chicken thighs in the bottom of a crockpot. Add the sliced carrots, celery, and onion evenly over the chicken. Pour the chicken stock into the crockpot. Sprinkle the au jus mix, chicken gravy mix, garlic powder, onion powder, and black pepper over the ingredients. Stir gently to combine. Cover the crockpot with the lid and cook on low for 6–8 hours or on high for 4–5 hours, until the chicken is tender and can be shredded easily. Once cooked, use two forks to shred the chicken directly in the crockpot. Stir the shredded chicken together with the vegetables and flavorful cooking juices. Serve warm with mashed potatoes, rice, or your favorite side dishes.
