Ingredient list • Ogbono • Palm oil • Stockfish • Goat meat • Smoked Titus fish • Crayfish • Periwinkle • Uziza seeds • Uziza leaves • Seasoning cube • Salt • Yellow habanero peppers • Scotch bonnet peppers • Onions Cooking instructions • Season your proteins with scotch bonnet, onions, seasoning cube, and salt. Allow this to cook on medium heat until the meat releases its own natural liquid. • Add in your washed stockfish, then pour in enough water to properly cook the proteins through. Let this simmer until the meat is about 70% cooked and tender. • In a separate pan or pot, add your palm oil and your blended Ogbono. Turn the heat to low and gently stir. Do not fry it. Let it slowly melt into the oil until it forms a smooth, lump-free paste. • Back to your meat pot, while there is still some stock inside, add in your remaining scotch bonnet, yellow habanero, and blended uziza seeds. Stir everything together properly. • Pour in the melted Ogbono mixture and mix well. The soup will thicken quickly, so add a little water gradually to loosen it to your preferred consistency. Be careful not to add too much. • Add crayfish, smoked Titus fish, and periwinkle. Stir and allow it to cook for a few minutes so all the flavors come together. • Finish with uziza leaves.
