Fill a piping bag fitted with a star tip (like Wilton 1M) or any large open tip with the dough. Pipe long strips of dough onto the parchment paper and cut the ends with scissors. Let the piped churros rest on the counter for 30 minutes. 	5.	Fry the churros: Heat oil in a deep pan to 350°F (175°C) or over medium heat. Carefully pick up each churro with the parchment paper and drop it into the oil (the paper will release easily). Fry for 4–5 minutes, turning occasionally, until golden brown. 	6.	Coat and serve: Remove the churros and place them on a paper towel to drain. While still warm, roll them in the cinnamon sugar mixture.
