Restaurant style fries! Original recipe from America test kitchen! Ingredients 3 lbs potatoes 2 quarts water 1/4 kosher salt 1 teaspoon baking powder 1/2 cup cold water 1/2 cup cornstarch Peel and prepare potatoes Bring water, salt and baking powder to a boil. Add potatoes and cook for 3 minutes Mix cornstarch and water to make slurry. Add strained potatoes to cornstarch slurry and mix. Heat oil and add potatoes in batches. Cook until crispy. About 5 minutes!
