Hey some people keep calm better by talking to themselves aloud. I certainly don’t begrudge my cooks talking or counting out loud if that’s what it takes to put the meal out right. What I don’t allow in my kitchen is someone who would put another cook down for doing something in a way that they are most comfortable with. I prize efficiency in my kitchen and if someone isn’t comfortable in my kitchen they aren’t efficient. That goes for techniques they prefer and social environment.

I’m not a chef, but I am a bartender and when it gets really busy in here which happens from time to time mainly when we host events so what we consider a shot where I work is about pouring seven seconds now we do alter that depending on if there’s a liquor limiter, I don’t know what the technical term for it is, but that little plastic thing that goes on top if there’s one of those or one of those fancy snouts or if there’s no like if it’s just open, then we count for that but mainly seven seconds and it helped so much counting out loud to myself and it’s it’s unbelievable
