a very merry christmas from the H-Ts…this one is for the coffee & walnut lovers☕️🤎 (for the coffee pancakes): - 1 ripe banana, mashed - double espresso - 2 heaped tbsp greek yogurt - 1 egg - 2tbsp honey - 1 cup flour - 1 heaped tbsp baking powder - 2tbsp butter (for the frosted walnuts): - a handful of walnuts - 1tbsp butter - 1tsp brown / white sugar - 1tbsp icing sugar (to serve): - greek yogurt - extra honey method: 1. begin by combing the mashed banana, espresso, yogurt, egg, honey, flour and baking powder in a medium sized bowl until thoroughly combined. 2. melt 1tbsp of the butter in a frying pan on a medium / low heat. 3. place about 2 heaped tosp of pancake batter onto the pan in a round shape. 4. cook until golden for a few minutes until carefully flipping over. cook for another few minutes before removing from the pan. 5. repeat these steps with the rest of the batter. 6. in the same pan / seperate pan, melt the rest of the butter on a higher heat, along with the brown / white sugar and toss the walnuts in the pan. 7. ensure the nuts are evenly coated in the sugar & butter mix! 8. they should be nicely caramelised after a few minutes. turn off the heat and allow to cool slightly until crispy. 9. transfer into a small bowl and toss in the icing sugar. shake around until the walnuts are 'frosty'! 10. serve the pancakes in a stack, top with a dollop of greek yogurt and finally the frosted walnuts. 11. drizzle with some extra honey if you like... enjoy xxx⛄️ #breakfastrecipes #coffee #pancakes #yogurt #christmas
