Chicken & sweet potato croquettes 🧡🍠🌽 These were such a hit and are a really easy way to use up bits and pieces you already have in the fridge! Also great for freezing so the perfect batch cook! Ingredients: • 1 sweet potato • 3 spring onions • 1 chicken breast • ~50g sweetcorn • ~50g cheese • ~25–30g breadcrumbs Method: Peel and chop the sweet potato and boil until soft, then drain and mash. You could also microwave it and scoop out the inside, but we don’t have a microwave! Finely chop the spring onions and sweetcorn, grate the cheese and cook the chicken thoroughly before finely chopping. I cooked mine in the air fryer with a little olive oil and pepper, but you could bake or boil it too. Mix everything together and shape into little croquettes. Place on a baking tray and bake at 180°C for around 15 minutes. They should hold their shape but still be really soft and squishable for little gums 🤍 I also just blitzed the heel of our loaf in the Nutribullet to make the breadcrumbs!
