Boujee on a budget  TOFU DAN DAN NOODLES  Tofu “Mince” - 125g firm tofu (about ⅓ block), pressed & crumbled - 1 tbsp ginger, grated  - 1 spring onion, white parts only, finely sliced  - 1/2 tsp five spice powder  - 2 tbsp soy sauce - 1 tbsp dark soy  - 2 tbsp shaoxing wine  - 1 tbsp neutral oil Sauce - 1 tbsp peanut butter or sesame paste (or tahini) - 1 tbsp chilli crisp oil  - 1 small clove garlic, grated - 1 tbsp soy sauce - 1 tbsp black vinegar - ½ tsp sugar - 1/4 teaspoon five spice powder  - 1/2 teaspoon Sichuan peppercorn powder (ground a few whole Sichuan peppercorns in a mortar and pestle) - 1/4 cup hot noodle water. More if necessary to loosen  Noodles & Greens * 80–100g wheat noodles * 1 bok choy, cut in half  * 1 tbsp sesame oil  * 1 spring onion, green parts, finely sliced Method 1. Crisp the tofu. Heat oil in a wok. Add crumbled tofu & ginger. Leave to colour before stirring. Add soy, dark soy & spice. Let it caramelise. Stir through spring onion, cook 1 minute, deglaze with Shaoxing wine. Set aside. 2. Cook noodles. Boil per packet. Add greens for the last 30 seconds. Reserve a little noodle water, then drain. 3. Char the bok choy. Heat sesame oil in a pan. Cook bok choy cut-side down until deeply charred. 4. Make the sauce. Whisk peanut butter, chilli crisp, garlic, soy, Sichuan powder, sugar & vinegar. 5. Assemble. Toss noodles in, adding the hot water. Top with crispy tofu & charred bok choy.
