These babies will help you make it through any winter storm! 🤎 #Recipe  Yields 12-16 cookies What you need: Cookies * 1 cup unsalted butter, (227 grams), +1 tbsp used for after browning * 1 cup packed brown sugar (200 grams) * 1/2 cup granulated sugar (100 grams) * 2 large eggs * 1 tsp vanilla extract (4 grams) * 1 1/2 cups all-purpose flour, not packed, spooned and leveled (190 grams) * 3/4 tsp baking soda (3.5 grams) * 1/4 tsp baking powder (1 gram) * 1/2 tsp cornstarch (1.5 grams) * 1/2 tsp salt (3 grams) * 1/2 tsp cinnamon (1.3 grams) * 2 cups old-fashioned rolled oats (200 grams) * chocolate chips (measure with your heart!) what to do: -To brown the butter, place butter in a medium saucepan over medium low heat and melt. Continue to cook until butter starts to foam and release a fragrant odor. It will smell nutty and glorious! Keep cooking until butter turns brown then remove from the heat, pour immediately into a heat safe bowl. Let the butter cool. As butter is cooling, add the 1 additional tbsp of softened butter to the brown butter (this helps add moisture back into the browned butter!) -In a medium bowl, mix flour, salt, baking soda, powder, cornstarch, cinnamon and oats. After butter cools (about 30 minutes) add sugars and cooled butter to a stand mixer with paddle attachment. Beat for about 2 minutes on medium speed. Hand mixer also works. After 20 minutes, preheat oven to 350. Place only 3-4 cookies on a sheet at a time. Bake for 10-12 minutes. If your cookies are bigger, you may need to bake for about 12-14 minutes. Cookies should be golden brown around the edges and slightly underdone in the middle! (Note: halfway through baking, if cookies arent spreading, take the tray out of the oven and tap it two times firmly on the counter top, return the tray to the oven to continue baking). Remove cookies from the oven, let them cool for 5-10 minutes, then transfer to a cooling rack.
