Steak Chimichurri & Spanish Potatoes * 2 boneless ribeye steaks, generously peppered and salted and left in the fridge overnight Chimichurri: * 1/2 cup fresh Parsley, minced * 2 tbls fresh, minced Oregano * 2 small garlic cloves, minced * 1 small red chili, minced * 2/3 cup Olive oil * 4 tbls Red wine vinegar * 1/2 tsp salt (plus a pinch more) Potatoes: * 1 1/2 lbs golden potstoes, cut into 1 1/2 in chunks * 5 tbls olive oil * 2 tbls double concentrated tomato paste * 4-5 large garlic cloves, smashed and halved * 5 fresh oregano sprigs * 1 tsp Salt (plus 2 tbls for salting water) * 1/2 tsp Pepper * 1 tsp smoked paprika * 1 tsp sweet paprika * 3/4 tsp cumin Chimichurri: 1. Stir together all ingredients. Set aside for flavors to develop. Potatoes: 1. Oven at 450 degrees Fahrenheit 2. Add cut potatoes to a pot and fill with water just above potatoes. Add 2 tbls salt to the water. Bring to a boil. 3. Once boiling, add 1/2 tsp baking soda, lower heat to medium and boil for 10 mins. 4. White potatoes boil, heat oil over medium low heat, in a small pan. After a minute, add garlic chunks. Once they start to barely get golden, add springs of oregano. Fry until garlic is golden and remove both. SAVE THE FRIED GARLIC. 5. Chop fried garlic and add to chimichurri. 6. Whisk tomato paste into the infused oil. Set aside. 7. Drain potatoes and add to a big bowl. Whole potatoes are still hot, roughly stir potatoes around with a spatula. You’ll want to make a mushy coating on the potatoes. 8. Pour oil and tomato paste over potatoes until well coated. 9. Stir together all dry seasonings. Sprinkle half over potatoes and stir to evenly distribute. Sprinkle the rest of the seasoning and again, stir. 10. Spread potatoes out onto a lined baking sheet. Make sure they’re not too close together. Bake for 20 mins, stir, bake another 20 mins. Steak: 1. Bring steaks to room temp before cooking. 2. Grill steak or sear in a hot cast iron skillet over medium high heat with some avocado oil until desired doneness. I did 2 1/2 mins per side for 1 1/2in steaks for medium doneness. 3. Let the steak rest 7-ish mins before slicing. I tent them with foil, you don’t have to. #steak #chimichurri #fyp
