Here’s how I made this simple meal ⬇️ 🍞 Sourdough — I get mine fresh from the farmers market from @smallaxbread. I love traditionally fermented sourdough because the fermentation process can make it easier to digest for some people, and it’s one of my favorite ways to enjoy carbohydrates. 🧈 Butter — I lightly butter my sourdough and toast it in a cast-iron skillet, then use a little more to fry my eggs. Butter adds richness and contains fat-soluble vitamins, while also making a simple meal incredibly satisfying. 🍳 Eggs — Two eggs give me high-quality complete protein, plus choline, B vitamins and other nutrients that support brain function, muscle maintenance and healthy aging. 🥑 Avocado — I add about half an avocado for monounsaturated fats, fiber and potassium. The combination of protein, fat and fiber is what makes a simple meal like this actually keep me satisfied. 🌿 Fresh dill — I don’t use a lot of garlic or strong aromatics, so fresh herbs are one of my favorite ways to add tons of flavor. Herbs like dill also provide plant compounds and antioxidants and they make even the simplest food taste fresh. 🫒 Extra virgin olive oil — A little drizzle on top adds more monounsaturated fat and polyphenols. It’s one of those simple staples I use almost every day. 🧂 Sea salt + pepper — Just enough to bring all those fresh flavors together. 🍑🫐 Plum + berries — Both fresh from the farmers market. Fruit gives me fiber, vitamins and a variety of colorful plant compounds and I genuinely look forward to eating what’s in season. That’s it. Simple, whole foods prepared well. No complicated recipe required.
