Southern Cornbread Pizza Cornbread: 1 cup cornmeal 2 tbsp. butter, melted 1 egg 1/2 tsp. salt 1/2 tsp. black pepper 3/4 c. buttermilk Water if necessary Grease a 12” cast iron skillet* and heat it in a 450 degree oven while you mix the cornbread. Combine all ingredients in a mixing bowl, adding water to make a pouring consistency, if necessary. Pour into hot skillet and bake for 15-18 minutes. Remove from oven and spread with melted butter. Return to oven for 5 minutes and prepare toppings: Tomatoes Pimento cheese 5-6 slices bacon, cooked and chopped Candied jalapeños Captain Rodney’s Boucan Glaze, optional Remove skillet from oven and top with pimento cheese, spreading evenly over the top. Add tomatoes, jalapeños, and bacon, distributing evenly. Drizzle with Boucan Glaze if using. I make my bacon 🥓 in the microwave also and I use a correlle platter, I’m always able to save the rendered grease. I immediately take the bacon off and let it drip a minute then I pour my grease into a jar. Try that! It’s worked for me for years.
