Our chef likes to pre-warm the plates in the oven and then have them under the pass… The plates can be scolding hot.. ain’t no way am I stacking 3 plates in one arm.. 🫠🫠 Also ALWAYS have to pre-warn the customers every single time they reached out to take a plate of my hands.. I literally have to pull plate away and tell them it’s a hot plate, let me set it down..

In restaurants it actually is a unwritten rule that you don’t carry more then 3 plates. But if you work high tempo places where table need to med flipped, then ofcourse you have to.

My restaurant literally has a tray service rule. EVERYTHING must be on a tray. Ketchup, salt and pepper, one cup, one plate, one sauce, etc. we will literally get in trouble and told to turn around if we try to walk into foh without a tray 💀

Actually most fine dining. They have to use a tray… You’re not supposed to carry plates like that in most corporate restaurants, fine dining.
